Tomato and Herbed Goat Cheese

After a Pomona Hill Farm interview, what better way to follow than a fresh tomato and herbed goat cheese recipe. I anticipate when heirloom tomatoes are available. It is not officially summer until I have a tomato drizzled with olive oil, sprinkled with a pinch of salt and sugar and baked in the oven with mozzarella and basil leaves.

With all of the fresh produce available, I never really have to ‘cook’ in the summer. You can go for weeks just chopping and serving everything fresh with a loaf of bread and cheese.
