In Season: Corn and Cucumbers

Crunchy, sweet, and a little spicy…

Corn and cucumbers are plentiful right now. This recipe, by Sasha Swerdloff, is a mason jar summer salad filled with cucumbers, corn, and green beans straight from the garden. Create her simple marinade and you have a portable and perfectly in season lunch! The recipe is available here. She describes it as “crunchy, sweet, and little spicy”.  I like to add chick peas or hardboiled egg for some additional protein. You can customize this salad in so many ways by substituting different herbs.
