It is so inspiring to meet women who have discovered their passion in life and are out pursuing it. At a trip to the county fair, Jessica discovered beekeeping. She is now cultivating local honey, saving swarms of bees, and conduction sessions for educating people about the plight of the honeybee.
She keeps busy as the founder of Honeybee Tennessee, but we were able to find a few moments to chat together about all the ways we love to use local honey in recipes.
“I love using honey to sweeten my tea and coffee. Honey is a natural sugar. My favorite is honey with goat cheese. I also like pairing honey with spicy foods to give that sweet and spicy flavor. “
Having a jar of local honey is a pantry staple. One of my favorite ways to use honey is to whip up a homemade honey butter with a pinch of sea salt. My favorite cheese and honey combination is honey with Humboldt fog. One of my favorite salad dressings, from The Honest Life is a mixture of freshly squeezed lemon, olive oil, and honey.
Serving Jessica’s favorite combination with honey drizzled over goat cheese chevre would make a lovely end of summer tasting party. You can sprinkle edible flowers over the platter for an added bit of summer.
