Earthy Mushrooms and Puréed Cauliflower

Mushrooms and cauliflower are some of my favorite seasonal vegetables for late Fall and early Winter.

I love the earthy flavor of roasted mushrooms. My favorite way to cook them is a method I discovered via Pinterest. Whole button mushrooms cooked on low over night in a crock pot covered in melted butter and seasoning to taste.
